Nut free option
- 1 medium head broccoli, cut into small bite-size pieces (about 4 cups)
- 1 large mango, cut into small pieces
- 1 large avocado
- 1 red capsicum
- 1/4 cup of almonds, toasted and chopped into pieces
- For the dressing
- 3 tablespoons extra virgin olive oil
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons pure maple syrup
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Whisk together the dressing ingredients and set aside.
- Combine the salad ingredients well and pour over the dressing.
- Sprinkle over the almonds and enjoy
Nut free option - omit the almonds
Fussy eater tip - Use less broccoli and more mango to make the salad more appealing. Try lightly steaming the broccoli if preferred.
